Same here.  I'm not 100% sure if he's been in MUT before but I'd love to see Dennis Smith.  Karl Mecklenburg, Claude Humphrey, Tommy Nobis, Deron Cherry would all be cool choices.  As far as more recent players, I think Eric Berry would be cool.  I know EA used to give him a lot of cards and he's a fan favorite.
