Neither actually. Just basic coverage like cover 2, 3, and 4. Especially if there's 3 down linemen.

Is there a cheese where my left tackle doesn't block or just let them run and the rusher gets a instant sack like everytime? It's always on the left side too.

Which is not bad. Playing what works for you. It's just frustrating that some people only use one formation and one defense.
