I was finally able to get it. All I did was click on a pass rusher as he was closing in on a sack and it finally counted.

I sacked the QB, tackled a HB, and tackled a WR after a catch and none of them counted as a tackle in the first defensive challenge. The rest of the challenges registered fine.
