Is there any way to open my presents on companion app?
I won’t have my Xbox until new years so will my presents still be able to be opened by that time?

You can’t open them from the companion app.
There is an alternative though. If you take a controller with you, and set up remote play beforehand, you can use the controller and your phone to open them.
If you decide not to, they’ll still be in your unopened packs when you come back
