If you don‘t typically get a lot of production from your DT I would probably user him from that spot. Run Cover 2 formations and pre-snap adjust sending a Sublb to deep middle third, then user the middle with Peppers.
Could also run a slot CB blitz play and user Peppers off the edge. When players see the slot CB blitzing they tend to throw to the HB in the flat or hit a quick slant and you just drop Peppers into coverage for the pick.
I also like to use Dollar formations against pass heavy offenses. Plays like Overload 3 Seam and DB Fire 2 can be effective using a similar strategy to what I described above.
Always send a Sublb to deep middle third when running cover 2 and you will want to set your coverage zones accordingly in coach adjustments.
