The OP raises a good question.  The answer depends on your scheme.  I'm using Brunell with Set Feet Lead, Hot Route Master & Fearless for 5 AP.  I run the Jets playbook and a Gun Split scheme that relies on the run, complemented by quick & intermediate passes.  That works GREAT with Brunell's Slinger 1 release.  Now, Brunell is NOT great on the super deep throws, as Slinger 1 struggles with passes >40 yards downfield.

So if your scheme doesn't rely on a ton of bombs, I'd go with Brunell.  If you want to be able to throw bombs with a good release, stick with Young.

Before I used him and played against him, I just assumed (like everyone else) this was Madden 20 Eric Dickerson all over again. But that was definitely not it. Dillon is a great card and is definitely no slouch, but he's not nearly as dominate as that ED card was. ED in Madden 20 would break damn near every tackle attempt, not just the first one. You also have the fact that Madden 20's meta was running the ball (still remember that guy winning the Madden Bowl while only running the ball and having a punter at QB) so a game that already favored the run game getting a card that is absolutely dominate in the run game was a recipe for disaster.

With Dillon, he will get through the first tackle unless he gets hit by a Secure Tackler/Enforcer or whatever (same with ED in Madden 20) but he doesn't seem to keep going like DIckerson did. Taking him down for a loss to end the Xfactor is difficult for sure, but as you said, he's very unlikely to break 80 yard TD runs like Dickerson would on a regular basis.

I was sceptical also, I have 40/40 legends and Quadfather is still great.  Think of DIckerson from a couple MUT's ago but better.  It is almost impossible to get Quadfather knocked out of the zone unless you run commit several plays in a row, which then opens up an easy passing touchdown over the top.

First of all Vikings defense is no where near Eagles caliber. I will admit though Jones completely balled out vs Vikings in the 2 games he played against them. He didnt have as many yards against the Colts but he still had 4 tds against a not very good either Colts defense.  And we didnt play well agianst 2nd and 3rd string players? Why would u show a team you could potentially face in the playoffs your entire playbook the last week of the season. And we got smacked by the Cowboys??? We lost by 6 points with our backup qb. The Giants have in no way shape or form been a problem for the Eagles all year long. You could argue one of Jones' worst games all year came against the Eagles when they lost 48-22. That last game we played against them. They werent trying nor were we.
