Ok, this is more of a 2 part question. What are the best Abilities in MUT Im more of a man coverage guy, and on offense I just throw to what's open, so what would be the best abilities for a guy like 99 Randy Moss and what would be the best abilities for a guy like Jamar Chase playing the slot. I would also like to know about playbooks, what are decent playbooks for both offense and defense.

MUST HAVE ABILITIES: Pick Artist and Secure Protector. Any ability that can be equipped for free should be activated as well. 

For receivers: Short Out/In Elite for slot guys. Deep Out/In for outside guys. Route Tech if you can spare the AP for it. You can use Redzone Threat on a TE or tall receiver but not necessary 

Pass Balanced on offense has every shotgun formation you could ever want. I’ve also used Saints and Commanders and those are great too.

Defense is a little trickier but I use Chiefs playbook cause I like Base Nickel and 3-3 is okay too.

Some good suggestions here. 

Offense:
Short Out Elite can even be used out wide and it helps against beating MCV off the line. 
Definitely want a throwing velocity ability on your QB, a nice stack is Set Feet Lead, HRM, Fearless, and Gunslinger for 5 AP or under.
I have Secure Protector on all of my OL, Post up is a great pair for 1 AP total. 

Defense: 
I have Deep Out Zone KO + Pick Artist for 1 AP on most of my DBs and Safeties.
If you’re facing a lot of Quadfathers and Gus the Bus', have Secure Tackler or Tackle Supreme on your user helps a ton to combat their Freight Train.
