Are these tokens redeemable all year? Should we save them? Thoughts?

yes
it depends, I like to use them for cards I need for my TT or the TOTW heroes to upgrade the lower guys. But waiting would prob be safer, but if your team isn't insane I'd use them now to make upgrades

anybody else having problems getting credit for the sets? Any suggested workarounds? I wasn't having any problems with these registering until the last 2 weeks.

Just have to be careful, I believe it has to be THIS weeks set.

I think they limit how many sets you can do. At least they did at the beginning. Example I used my first set on the 85 legends to get Hutchinson for my vikings tt. After I used it it said it was redeemed and couldn't be redeemed again. So I'm concerned once we get to 99s there will be only 3 available, collectors series, TOTW, legends/ultimate legends. Seems their intent is have us use them throughout the year to keep people from hoarding them and spending on all 99s

You can make like 20 a week. The totw is 60. You have plenty of time. Not to mention just buy the 99 when they come out. They aren't that expensive at the end. No reason to wait imo. By the time you will use your tokens. New Madden will be out in 3 months

I save mine for whenever they release champs for my Cowboys TT which we've barely gotten except for Larry Allen so needless to say I've got a lot
