It's hard to compare real-life football to the video game. Madden is hardly an NFL simulation. Also, there's a lot of stuff that happens in real life that would be really frustrating to happen in Madden. For example, receivers drop wide open passes all the time, but would you want that to happen to you just because it happens in the NFL?
If they have tip drill sure. If I see it happen, and notice the linemen has tip drill, it usually doesn't bother me.
Outside of that I would prefer them not to. The less fluke the better.

Sure take out things that happen but leave the cheese
They should be able to catch tipped passes that literally sit on their chest for 5 seconds
They should also be able to catch screen passes that are thrown right at them (See van ginkel)
But they should not be able to make lurking 1 hand interceptions while pass rushing
