Run a lot in the AKA Iconoclash challenges. It's hard to run repeatedly in head-to-head modes. If you can get the rushing yardage, the other stats will come with them.

Play solos battles on easy. It's the fastest way. You can easily put up 100 points a game. Sacks and tackles galore. Interception can be a lilltle harder to come by because the cpu qb is pretty dumb
