I havent done the ones where you have to win games with a team overall of less than 70 and 80, so does it still count if my starters are all bad and under 70 and 80 overall but my backups would boost the overall up and i sub them in during the game
All that matters is what the OVR of your team is - so put your starters as silvers and golds with your regular squad as backups and sub back in game. You always have the option to just do the field goal solo to win games with a lower overall team so you don't have to worry too much about the whole subbing your normal team back in game.

Thanks for the suggestion of the field goal solo, definitely going to do that. Is it in campiagn?
I just played through the Week 4 Campaign challenge for the kick return of 15+ yards.
Another easy one to do is the Week 1 rushing practice of 15+ rushing yards in 5 plays.
