It's super important, the game works off of minimum thresholds for the majority of stats -- the goal is to ensure your receivers all hit 90+ in Short, Mid & Deep accuracies. Beyond that, stats DO. NOT. MATTER. Rather, there will be diminishing returns beyond 90 SRR/MRR/DRR... which most current crop of receivers will exceed these, so you can essentially ignore stats for the rest of the year.
Abilities are the only thing that matters. 99 SPD is nice and all, but if it's a choice between a 98 SPD receiver who gets the ability stack you desire (Route Tech, Short in Elite are both fantastic) and a 99 SPD guy without any discounted ability buckets, well... i give up that one (or even a couple/few) speed in favor of the ability stack. All that being said, there's not too many offensive abilities (outside of the QB) that are truly that impactful, so maybe an argument could be made for the sheer speed.
If you find yourself facing a whole bunch of Press Man coverage, especially defenders with Bottleneck ability, you can use any of the following to help insta-win against those "dominant" press man attempts;

- RAC `em Up
- Max Security
