Play seasons or any h2h mode. You can let the cpu play defense for you, punt on offense and repeat

I play solo seasons, make the offensive stats I need and then will punt as Sevein suggested and just let the cpu play D.

Those I usually check off just by playing the game, any mode. Play enough and the tackles just come.
