You could answer the latter question for yourself: Physics combined with the physical strength of the receiver dictates that it's harder for a defender to be both subtle and effective with the handfighting that is permitted. SUBTLE is the operative word here.
Don't even begin to compare swerving to your example. That's not at all what permissible contact looks like in the NFL. Defenders get moved almost two yards clear of their line in Madden. That's absolute garbage, and would be flagged every time in the league by the most inexperienced and inattentive of officials.
