I've seen a bunch of snipes on this site that I'm just actively not seeing on my end. Should I be using the catalog or is it just an EA thing that doesn't show me?

I suspect that before MUT 25 EA reorganized its network into a series of hubs that don't populate auction data simultaneously. For illustration's sake, an item listed for auction through a West Coast United States server doesn't become visible to users across the continent for a few minutes.
