Im thinking of starting a theme team for the falcons but I don't know if it would be a good idea because the most chemistry is for the falcons but it is 2 so i need help on whether it would be ideal to start it now and sell a bunch of players or should i continue to grind and get the best possible team?

Start there. See how much each card is. At this point, dont take anyone over 92/200k. See if they have a lower level card you can grab for cheap and fill. Only the strat cards which is x5 and the TD is x2.
On O: Maybe Hester (save for last bit) Vick, Patterson will be expensive
D: Heyward and the 2 TD will be over 200k.
Id say you want to shoot for 40/50 if you cant make 50/50 to get the extra speed since it seems to lack some critical parts of a team (O and D lines)
