It could be a number of things.. We'd need a video to help you break it down.. Just off a pre-snap look, it could be Cover 3, or Cover 1, or Cover 3 Match.. But you can also mask any defense to a single-high safety look.

Yep, you can manually move your guys around before the snap, or before you pick a play, most formations have the disguise feature via the right stick.. flick it left or right to change from like man, cover 2, 3, 4, etc, and any play you pick will have the same presnap look.
