I know it's random what champs you get to choose from but are the odds good for getting current or more recent champs or is it possible to get screwed with choices from outdated 84-86 overall champs?

I don't think so. Every time I've done one it's the team builders and newest players. Especially the ones that fit my TT. Small sample size tho.
Pretty sure it’s guaranteed to have the newest champs or at least the ones that are at the current champ OVR.
So like right now it would contain some 91 Breakouts cards and other 90 champs. Not sure if it contains the POTMs though.

At the very least you should get a couple of them
When I redeemed the set to get Terrance for my Cowboys TT a month ago it gave me a few recently released Breakouts champs
