I seen on x that it's been happening to quite a few people. Sucks bc this happend to me twice last year. One of them times I couldn't do sets for just over a week. It sucks!

Sets in general, when we go to the tab the game immediately kicks us out of MUT and sends us back to the main menu

Yes, sets are working for me fortunately. Every Madden gets bugs that affect some people in unique ways every year. My issue is with the Weekly Spotlight sets not resetting each week. But I can complete any set, at least for the moment. I feel your pain!
