I just started and was able to figure out a effective offense this year but can't figure out any defense this year. Was wondering what the best playbook, formation and plays/adjustments are.

Its difficult to explain all the adjustments that top level professional players do.
A lot of it comes down to recognizing formations and what plays they could run out of them.
Would recommend multiple D playbook, 3 down lineman sets are good for getting pressure and still having solid coverage on the back end.
If you occupy the center, and one of the tackles with your dline, and then hold the guard on that side with your user...you can send 3or4 man edge pressures pretty consistently.
Multiple D has 3-4 odd, dime 3-2, and nickel 3-3. A good start to playing high level defense is picking a stock coverage like cover 3, and adjusting someone (or multiple) players into man coverage assignments to take away certain routes 💯
