This is SUPER confusing, especially to newer players -- those OVR ratings are absolutely meaningless, as pointed out above. This late in the year stats barely matter, although having players at max 99 SPD is quite nice.
2AP Universal Coverage is only worth it if you play a both Man and Zone. Quite often you can stack up a full complement of relevant Zone KOs (Flat, Mid, Deep In & Out) for 0-1AP, which is less than the Universal Coverage. Use whatever makes sense for your defense / scheme and players. You will regularly find 96-97+ OVR cards (such as Combine players) which are significantly better and more powerful than many of the 99s that drop today.
When it comes to determining how a card will play, on either side of the ball, typically you would go straight to the ability stack and review that/those. Hope that helps. Having height on your corners is a huge benefit, which means, everyone should seriously consider the All Star Athletes OOP players. If not ASA, then focus on Combine for budget beasts.
