Is there a reason why people keep millions and tens of millions of coins in their balance? Do they roll over to next year?
They don’t roll over into the next game.
A lot of players spend their coins on Rookie Premiere which gives them cards that can be used in this game as well as some they will be able to use in the next game. This can help give them a jump start in the next game.
I try to keep a decent stack of coins for upcoming releases as well as making investments on the Auction House to always be building more coins.

If you spend the coins on Cards, they will drastically drop in value throughout the week.
So it's best to keep the Coins on hand and not to hang on to the cards for too long.
Keep an eye on Mut Leaks for upcoming players and promos, and buy/sell accordingly.

I save my coins for Rookie Premiere, Golden Tickets, FAP and Redzone Royale. Then I will play until a little after Christmas and buy the new Madden.

These are all usually the last promos.
Golden Tickets = X amount of tickets are given out in packs to the community. If you get one you can create any card in the game with boosted stats and whatever abilities you want. These are usually some of the best cards in the game. Season pass will let you get 3-4 BNDfor free.
Fan Appreciation (FAP) = High end cards, the LTDS are what you want. I believe season pass or set allows you to get 1 BND.
Redzone Royale = in my opinion the best cards in the game, they ability stacks are unreal. You can get these by completing rookie premiere sets.

I had 50 mil at the end of m23. My account got banned because they thought I was buying from 3rd party. But reality was I got super obsessive and was working the AH literally all day everyday.
This time around I'm just playing the game for fun and not so much auctions.
I'm somebody who really finds it hard to spend coins. Not sure why. I guess mainly it's the fact that cards can lose value insanely fast. You might buy a champ for 700k and within a couple days they're down to 500k. I wish it were easier to just blow all my coins and have the best team. I think I could with 22.5 million right now. Oh well. At least I'll have plenty or Rookie Premiers!
I usually stack coins first half of the year so I can spend coins as I want on any card in the 2nd half of the year when the cards start getting good. Saved 40 mil up until sb promo and its been downhill since then. Sitting on 10 mil left with full ASA team and probably will hold most of it for rookie premiere.
Its dumb spending millions early game because the cards get outdated a lot quicker,atleast 2nd half cards have some longevity.(sb,combine,etc)
