As with most things, it depends. There's people who will roll 3-4k coin playbook sets and crank them out in high volume... although this late in the MUT season/year, i'm not sure how truly profitable those things are. Coins are and will remain king, so anything you can do to turn a profit (however small) could be a decent use of your time.
Although, there is a limitless amount of time one can sink into playing MUT menus. Sure, you CAN sit there sniping set pieces, building those out, selling for profit -- which may or may not be more enjoyable than this "simulation" fatball machine. Once you begin to get comfortable with the various filters and depending upon your tolerance or threshold for navigating the extremely slow menus, well... go nuts.
The MUT markets are fairly cyclical, over time you'll begin to recognize patterns and what/when is the right time to buy. If you wake up early on Saturday, Ultimate Legends are typically on sale, so buy over the weekend and sell back to the community during the week. Rinse + repeat.
THE moment you share a somewhat profitable set with the community, it almost immediately becomes less profitable. When everyone else appears to zig, you would want to zag.

If you can snipe pieces, any set can be good to grind
Also follow the market trends...buy AKA Icons set pieces Monday, sell the set players Friday
But UL set pieces Saturday, sell the set players Wed/THurs
.
Its beyond easy to make coins this year since EA limited the bots on the companion app...im at like 20 milly coins with minimal effort

I feel I am doing a good thing if the prices of the combine cards go down
