Genuine question,
Everyone I play online uses virtually the same team, and runs the same offense and defense. It's like attack of the clones, so I guess what I am wondering is how do y'all find that enjoyable? and what is it like to play each other?

Unfortunately there will always be a meta to deal with, and a lot of people gravitate towards that meta because typically it's the easiest offense/defense to implement. I will say the more and more you play you'll start to see more unique schemes but you'll always see the meta's more often than you see unique schemes.
When it comes to enjoying the game, that's all about mindset to me. Each game I play I'm looking for new ways to improve the things that I'm doing and improve the schemes that I'm running. I also enjoy the competition so even if I see the same scheme 3 times in a row, I want to beat that scheme as much if not more than I would want to beat another unique scheme I might see. I'm always trying to learn how I can be better and that gives me joy when playing any type of game.

I think that's a great attitude to have towards it!
I usually like to play creatively, so I appreciate when other players do as well. It does makes sense how you could find enjoyment in scheming how to effectively beat meta schemes though, definitely a whole different angle.

And yeah, the older I get the more I realize happiness is about how I look at things sometimes lol. The game makes me mad for sure and there are times I get really frustrated but I can always learn each game I play, I can always compete each game I play in, and if something goes against me chances are I'll get that same thing go in my favor the next time I play.
We tend to forget all the breaks we get for the ones that go against us.
