I run 3-4 but for 4-3 it should be:
DTs: Weight, Power moves, blockshed
DEs: Speed, Acc, Finesse moves, blockshed
OLBs: Coverage (man or zone, whichever you prefer), Speed, AWR, blockshed
MLB: Coverage stats, Height, Speed, AWR, blockshed + (AGI/ACC/COD if you user)

Pretty much the same thing but you want the biggest & fastest person with the best blockshed and either finesse or power moves.
DT are similar. Your edges (Ends or OLB) should be fast and have good finesse or power moves.
MLB zone/man above 80/speed/jump.
